- 4 large parsnips, peeled and chopped
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/2 cup coconut milk
- Salt and pepper to taste
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sauté until translucent.
- Add the chopped parsnips and cook for another 5 minutes.
- Stir in the cumin, coriander, and cinnamon.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until parsnips are tender, about 20 minutes.
- Blend the soup until smooth, then return to the pot.
- Stir in the coconut milk and season with salt and pepper.
- Serve hot, garnished with fresh herbs if desired.
