Creamy Spiced Parsnip Soup Recipe

  • 4 large parsnips, peeled and chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup coconut milk
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sauté until translucent.
  2. Add the chopped parsnips and cook for another 5 minutes.
  3. Stir in the cumin, coriander, and cinnamon.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until parsnips are tender, about 20 minutes.
  5. Blend the soup until smooth, then return to the pot.
  6. Stir in the coconut milk and season with salt and pepper.
  7. Serve hot, garnished with fresh herbs if desired.
