Creamy Potato Soup

A rich and comforting creamy potato soup with the savory addition of turkey bacon and chicken ham.

Ingredients

  • 4 cups diced potatoes
  • 6 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and set aside.
  2. In the same pot, add onions and garlic, sauté until translucent.
  3. Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Stir in heavy cream, salt, and pepper. Cook for an additional 5 minutes.
  5. Blend the soup with an immersion blender until smooth.
  6. Serve hot, topped with crispy turkey bacon and diced chicken ham.

Notes

  • Adjust seasoning to taste.
  • For a thicker soup, blend more of the potatoes.
