- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 pound cooked chicken, shredded
- 4 cups chicken broth
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup heavy cream
- 1 cup shredded cheese
- Salt to taste
- Chopped cilantro for garnish
- Tortilla strips for serving
- In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until soft.
- Add the shredded chicken, chicken broth, diced tomatoes, black beans, corn, cumin, chili powder, and salt. Stir to combine.
- Bring to a simmer and cook for 20 minutes.
- Stir in the heavy cream and cheese until melted and smooth.
- Serve hot, garnished with chopped cilantro and tortilla strips.
Notes
- For a spicier soup, add jalapeños.
