  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 pound cooked chicken, shredded
  • 4 cups chicken broth
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • Salt to taste
  • Chopped cilantro for garnish
  • Tortilla strips for serving

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until soft.
  2. Add the shredded chicken, chicken broth, diced tomatoes, black beans, corn, cumin, chili powder, and salt. Stir to combine.
  3. Bring to a simmer and cook for 20 minutes.
  4. Stir in the heavy cream and cheese until melted and smooth.
  5. Serve hot, garnished with chopped cilantro and tortilla strips.

Notes

  • For a spicier soup, add jalapeños.
  • Top with avocado or additional toppings as desired.
