  • 1 cup small pasta (like ditalini or elbow)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until translucent.
  2. Add shredded chicken and thyme, stir for 2-3 minutes.
  3. Pour in chicken broth and bring to a boil.
  4. Add pasta and cook according to package instructions until al dente.
  5. Reduce heat and stir in heavy cream and spinach, cooking until spinach wilts.

Notes
