Creamy Butternut Squash Risotto Delight

This creamy and decadent butternut squash risotto is enhanced with the irresistible flavor of turkey bacon, delivering comfort in every bite.

  • 1 cup Arborio rice
  • 4 cups vegetable broth
  • 1 cup butternut squash, diced
  • 4 slices turkey bacon, cooked and chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a saucepan, heat vegetable broth over low heat.
  2. In another pot, heat olive oil and sauté onions and garlic until translucent.
  3. Add the Arborio rice and stir for 1-2 minutes.
  4. Gradually add the warm vegetable broth, one ladle at a time, stirring frequently.
  5. Once the rice is al dente, stir in the butternut squash and turkey bacon.
  6. Add Parmesan cheese, season with salt and pepper, and mix well.
  7. Garnish with fresh parsley before serving.

Notes

  • For a vegan version, omit the turkey bacon and cheese.
  • Make sure to stir constantly to achieve the creamy texture.
