Creamy Butternut Squash Mac and Cheese

A delicious and creamy dish combining butternut squash with macaroni and savory turkey bacon.

  • 1 pound elbow macaroni
  • 2 cups butternut squash, diced
  • 4 slices turkey bacon, cooked and chopped
  • 2 cups shredded cheese (such as cheddar)
  • 2 tablespoons olive oil
  • 1 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the elbow macaroni according to package instructions.
  3. In a skillet, heat the olive oil over medium heat and add the diced butternut squash. Cook until tender.
  4. Add the cooked turkey bacon to the skillet and mix well.
  5. In a large bowl, combine the cooked macaroni, butternut squash mixture, cheese, milk, garlic powder, onion powder, salt, and pepper.
  6. Transfer the mixture to a baking dish and top with additional cheese if desired.
  7. Bake for 25-30 minutes until heated through and bubbly.

Notes

  • For a vegetarian option, omit the turkey bacon.
  • Add breadcrumbs on top for extra crunch.
