  • 4 slices turkey bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Add onions and garlic, sauté until translucent.
  3. Stir in sliced mushrooms, cooking until soft.
  4. Add chicken broth and thyme; bring to a boil.
  5. Reduce heat, simmer for 15 minutes.
  6. Stir in heavy cream, and season with salt and pepper to taste.
  7. Cook for an additional 5 minutes before serving.
