  • 1 cup fresh cranberries
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup orange juice
  • 1 tablespoon orange zest
  • 1/2 cup brown sugar for streusel
  • 1/4 cup all-purpose flour for streusel
  • 1/2 teaspoon cinnamon for streusel
  • 2 tablespoons cold butter for streusel

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine melted butter, eggs, vanilla extract, orange juice, and orange zest.
  4. Blend the wet ingredients into the dry ingredients until just combined. Gently fold in cranberries.
  5. In a separate bowl, combine brown sugar, flour, and cinnamon for the streusel topping. Cut in cold butter until crumbly.
  6. Fill each muffin cup with batter and sprinkle the streusel topping over each.
  7. Bake for 18-20 minutes or until a toothpick comes out clean. Let cool before serving.
