Cozy Autumn Wild Rice Soup

A warm and hearty wild rice soup perfect for chilly autumn days, featuring turkey bacon for added flavor.

  • 1 cup wild rice
  • 4 strips turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, diced
  • 2 celery stalks, diced
  • 6 cups chicken broth
  • 1 cup mushrooms, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup heavy cream

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. In the same pot, sauté the onion, garlic, carrots, and celery in the bacon grease until softened.
  3. Add the wild rice, chicken broth, mushrooms, thyme, rosemary, and the chopped bacon. Bring to a boil.
  4. Reduce heat and simmer for 40-50 minutes until the rice is tender.
  5. Stir in the heavy cream and adjust seasoning with salt and pepper. Heat through before serving.
