  • 2 cups cooked chicken, shredded
  • 6 cups chicken broth
  • 2 cups egg noodles
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1/2 cup onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Set the Instant Pot to sauté mode and heat olive oil.
  2. Add onions, carrots, and celery, sautéing until soft.
  3. Stir in garlic and thyme, cooking for an additional minute.
  4. Pour in chicken broth and add the shredded chicken.
  5. Seal the lid and cook on high pressure for 10 minutes.
  6. Quick release the pressure, then stir in the egg noodles.
  7. Cook on sauté mode for an additional 5-7 minutes, until noodles are tender.
  8. Season with salt, black pepper, and garnish with parsley before serving.

Notes

  • Feel free to use rotisserie chicken for added convenience.
  • For a heartier soup, add more vegetables like peas or corn.
