Comforting Chicken Dumpling Soup

A warm and hearty soup perfect for cold days.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups carrots, sliced
  • 1 cup celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups biscuit mix
  • 2/3 cup milk

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chicken breasts and cook until browned on both sides.
  3. Pour in chicken broth and add carrots, celery, thyme, garlic powder, and onion powder.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Remove chicken, shred it, and return it to the pot.
  6. In a separate bowl, mix biscuit mix and milk until combined.
  7. Drop spoonfuls of the biscuit mixture into the simmering soup.
  8. Cover and cook for 10 minutes until dumplings are fluffy.

Notes

  • Feel free to add other vegetables like peas or corn.
  • This soup can be made with leftover chicken as well.
