  • 1 cup sour cream
  • 1 large egg

  • 1 teaspoon vanilla extract
  • ⅓ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the sour cream, egg, melted butter, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. In a separate bowl, combine the brown sugar, cinnamon, and nuts (if using) for the topping.
  6. Fill each muffin cup halfway with batter, sprinkle with the topping, then add more batter on top.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let them cool in the pan for 5 minutes before transferring to a wire rack.
