1 pound ground beef
1 can red enchilada sauce
8 flour tortillas
2 cups shredded cheese (cheddar or Mexican blend)
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Instructions
Preheat the oven to 350°F (175°C).
In a skillet, heat olive oil over medium heat. Add ground beef and season with garlic powder, onion powder, cumin, salt, and pepper. Cook until the beef is browned.
Warm the tortillas slightly to make them pliable. Spoon the beef mixture and some cheese onto each tortilla, roll them up, and place them seam-side down in a baking dish.
Pour the red enchilada sauce over the rolled tortillas and sprinkle with remaining cheese.
Bake for 20-25 minutes until the cheese is bubbly and golden.
Notes
For extra flavor, add diced onions and peppers to the beef mixture.
Top with fresh cilantro and sour cream before serving.
