  • 1 tablespoon ground cinnamon
  • 1/4 cup walnuts, chopped (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash the bananas until smooth.
  3. Stir in the melted coconut oil and brown sugar until well combined.
  4. Add the eggs and vanilla extract, mixing well.
  5. In a separate bowl, whisk together the baking soda, salt, and gluten-free flour.
  6. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  7. In a small bowl, mix together cinnamon and sugar for the swirl.
  8. Pour half of the batter into the prepared loaf pan, sprinkle with half of the cinnamon-sugar mixture, then add the remaining batter and top with the rest of the cinnamon-sugar.
  9. Using a knife, swirl the batter to create a marbled effect.
  10. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  11. Let cool before slicing.
