Chocolate Cherry Upside Down Cake

A deliciously rich chocolate cherry upside down cake that makes for a perfect dessert.

  • 1 cup pitted cherries
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a cake pan and arrange the cherries at the bottom.
  3. In a mixing bowl, cream together the butter and sugar until fluffy.
  4. Add the eggs one at a time, mixing well with each addition.
  5. Stir in the vanilla extract.
  6. In a separate bowl, combine the flour, cocoa powder, baking powder, and salt.
  7. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk.
  8. Pour the batter over the cherries in the pan.
  9. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  10. Let cool before inverting onto a plate.

Notes

  • For a richer flavor, add a pinch of espresso powder to the batter.
  • This cake can also be topped with whipped cream or ice cream for serving.
