Chinese Chicken Fried Rice

A delicious twist on traditional fried rice using turkey bacon.

Ingredients

  • 2 cups cooked rice
  • 4 strips turkey bacon
  • 1 cup chicken, diced
  • 2 eggs
  • 1 cup mixed vegetables
  • 3 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • 2 green onions, sliced

Instructions

  1. Cook turkey bacon in a large pan until crispy. Remove and chop.
  2. In the same pan, add cooked rice and stir-fry for 2 minutes.
  3. Add diced chicken and mixed vegetables, cooking until heated through.
  4. Push rice to one side, scramble eggs in the pan, then mix with the rice.
  5. Add soy sauce, sesame oil, and green onions, stirring well.
  6. Return chopped turkey bacon to the pan, mix, and serve hot.

Notes

  • For an extra kick, add a splash of sriracha.
