Chicken & Sweet Potato Rice Bowl

Ingredients

  • 2 cups cooked rice
  • 1 pound chicken breast, diced
  • 1 large sweet potato, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • 2 cups broccoli florets

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine the diced chicken with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the chicken and sweet potatoes on a baking sheet.
  4. Bake for 25-30 minutes, or until the chicken is cooked through and sweet potatoes are tender.
  5. In the last 10 minutes of baking, add the broccoli florets to the baking sheet.
  6. Serve the chicken and vegetables over the cooked rice.

Notes

  • For extra flavor, marinate the chicken for a few hours before baking.
  • You can add your choice of vegetables to this bowl.
