  • 2 cups potatoes, diced
  • 1 cup cooked chicken, shredded
  • 1 cup turkey bacon, chopped
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion, carrots, and celery, sautéing until softened.
  2. Add minced garlic and cook for an additional minute.
  3. Stir in the diced potatoes, chicken broth, thyme, and paprika. Bring to a boil.
  4. Reduce heat and let simmer until potatoes are tender, about 20 minutes.
  5. Add shredded chicken and turkey bacon. Stir and let cook for another 5 minutes.
  6. Season with salt and pepper to taste. Serve warm.
