Chicken Potato Soup

A delightful blend of tender chicken, hearty potatoes, and crispy turkey bacon, perfect for a comforting meal any day.

Ingredients

  • 1 pound chicken breast, diced
  • 4 cups potatoes, peeled and diced
  • 1 cup turkey bacon, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Remove bacon and set aside, leaving the drippings in the pot.
  3. Add onion and garlic to the pot, sauté until softened.
  4. Add chicken and cook until no longer pink.
  5. Add potatoes, chicken broth, salt, and pepper. Bring to a boil.
  6. Reduce heat and simmer for 15 minutes, until potatoes are tender.
  7. Stir in heavy cream and cooked turkey bacon. Cook for another 5 minutes.
  8. Garnish with fresh parsley and serve hot.

Notes

  • For a thicker soup, use an immersion blender to puree some of the potatoes.
  • You can substitute regular bacon for turkey bacon if desired.
