Chicken Pot Pie Soup Recipe

  • 1 pound chicken, cooked and shredded
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup potatoes, diced
  • 1/2 cup frozen peas
  • 1/2 cup onion, chopped
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, melt butter over medium heat.
  2. Add onions, carrots, and celery. Cook until softened.
  3. Stir in flour and cook for 1 minute before gradually adding in chicken broth.
  4. Add potatoes, thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat and stir in heavy cream and cooked chicken. Simmer for 10 minutes.
  6. Add frozen peas and cook for an additional 5 minutes. Serve hot.

Notes

  • For a thicker soup, add more flour.
  • This soup can be made ahead of time and reheated.
