Chicken Pot Pie Soup

A warm and hearty Chicken Pot Pie Soup that combines the flavors of traditional chicken pot pie with the comfort of a soup.

Ingredients

  • 4 slices turkey bacon
  • 1 pound boneless chicken breast
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onions, chopped
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Cook the turkey bacon in a large pot over medium heat until crispy. Remove and chop into pieces.
  2. Add chopped chicken to pot and cook until browned.
  3. Stir in carrots, celery, and onions and cook until softened.
  4. Sprinkle flour over the vegetables and cook for another minute.
  5. Gradually pour in chicken broth, stirring constantly.
  6. Add peas and thyme, and season with salt and pepper.
  7. Simmer for about 20 minutes or until thickened. Serve warm.

Notes

  • For a richer flavor, you can add a splash of heavy cream just before serving.
