Chicken Pot Pie Soup

  • 1 pound turkey bacon
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cups carrots, sliced
  • 2 cups celery, diced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup all-purpose flour
  • 1 cup heavy cream
  • 2 cups biscuits, cut into pieces

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and crumble.
  2. In the same pot, sauté onion and garlic until translucent.
  3. Add carrots and celery; cook for 5 minutes.
  4. Stir in chicken broth, shredded chicken, peas, thyme, salt, and pepper. Bring to a simmer.
  5. In a separate bowl, mix flour with a little water to create a slurry.
  6. Add the slurry to the pot and stir in cream.
  7. Add biscuits and cook until heated through.
  8. Serve hot, garnished with crumbled bacon.

Notes

  • This soup can be topped with fresh herbs for extra flavor.
  • For a lighter option, substitute heavy cream with milk.
