Chicken and Wild Rice Soup

A cozy and comforting chicken and wild rice soup featuring turkey bacon for added flavor.

Ingredients

  • 1 cup wild rice
  • 2 cups cooked chicken, shredded
  • 4 slices turkey bacon, cooked and crumbled
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 teaspoons dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery. Sauté until softened, about 5-7 minutes.
  3. Stir in the cooked turkey bacon, shredded chicken, wild rice, broth, thyme, and garlic powder.
  4. Bring to a boil, then reduce heat and simmer for 30-40 minutes until rice is tender.
  5. Stir in heavy cream and season with salt and pepper. Cook for an additional 5 minutes.
  6. Serve hot and enjoy!

Notes

  • For a vegetarian version, omit the turkey bacon and use vegetable broth.
  • This soup can be blended for a creamier texture.
