  • 2 large eggs

  • 1 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1 tablespoon cinnamon
  • 1/4 cup granulated sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition, then stir in the vanilla.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, cream of tartar, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In a small bowl, mix together the cinnamon and the sugar for rolling.
  7. Shape the dough into balls about 1 inch in diameter, roll them in the cinnamon sugar, and place them on a baking sheet.
  8. Bake for 10-12 minutes or until the edges are set and the centers look slightly underbaked.
  9. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For extra chewiness, underbake the cookies slightly.
  • Store cookies in an airtight container to maintain freshness.
