  • 2 cups vegetable broth
  • 1 cup broccoli, chopped
  • 1 cup bell peppers, diced
  • 1 cup corn
  • 1 cup shredded cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a pot, combine quinoa and vegetable broth; bring to a boil.
  3. Reduce heat to low, cover, and simmer for 15 minutes.
  4. In a large bowl, mix cooked quinoa with broccoli, bell peppers, corn, and seasonings.
