4 cups mashed potatoes
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
2 large eggs
1/4 cup chopped green onions
1/4 cup all-purpose flour
1 teaspoon garlic powder
1 teaspoon onion powder
salt and pepper to taste
oil for frying
Instructions
In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, eggs, green onions, flour, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Heat oil in a deep frying pan over medium heat.
Form the potato mixture into small balls and carefully place in the hot oil.
Fry until golden brown on all sides, about 3-4 minutes per batch.
Remove and drain on paper towels before serving.
Notes
For a spicier kick, add some minced jalapeños to the mixture.
