  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup chopped green onions
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt and pepper to taste

Instructions

  1. In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, eggs, green onions, flour, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  2. Heat oil in a deep frying pan over medium heat.
  3. Form the potato mixture into small balls and carefully place in the hot oil.
  4. Fry until golden brown on all sides, about 3-4 minutes per batch.
  5. Remove and drain on paper towels before serving.
