Cauliflower Sausage Kale Soup Recipe

Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casing removed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 head cauliflower, chopped
  • 4 cups vegetable broth
  • 2 cups kale, chopped
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the sausage and cook until browned.
  3. Stir in the onion and garlic, cooking until the onion is translucent.
  4. Add chopped cauliflower and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer until the cauliflower is tender.
  6. Stir in kale, thyme, salt, and pepper. Cook until the kale is wilted.

  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
