2 boneless, skinless chicken breasts
8 ounces fettuccine pasta
2 tablespoons Cajun seasoning
2 tablespoons olive oil
4 cloves garlic, minced
1 cup heavy cream
1 cup grated Parmesan cheese
Salt and pepper to taste
2 tablespoons fresh parsley, chopped
Instructions
Cook the fettuccine pasta according to package instructions; drain and set aside.
Season the chicken breasts with Cajun seasoning.
In a large skillet, heat olive oil over medium-high heat; add chicken and cook until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and let rest.
In the same skillet, add minced garlic and sauté until fragrant.
Add heavy cream to the skillet, stirring to combine; then stir in Parmesan cheese until melted and smooth.
Slice the cooked chicken and add back to the skillet along with the cooked fettuccine; toss to coat.
Season with salt and pepper to taste; garnish with parsley before serving.
Notes
For extra flavor, consider marinating the chicken in Cajun seasoning overnight.
Can substitute cream with half-and-half for a lighter version.
