  • 2 boneless, skinless chicken breasts
  • 8 ounces fettuccine pasta
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook the fettuccine pasta according to package instructions; drain and set aside.
  2. Season the chicken breasts with Cajun seasoning.
  3. In a large skillet, heat olive oil over medium-high heat; add chicken and cook until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and let rest.
  4. In the same skillet, add minced garlic and sauté until fragrant.
  5. Add heavy cream to the skillet, stirring to combine; then stir in Parmesan cheese until melted and smooth.
  6. Slice the cooked chicken and add back to the skillet along with the cooked fettuccine; toss to coat.
  7. Season with salt and pepper to taste; garnish with parsley before serving.

  • For extra flavor, consider marinating the chicken in Cajun seasoning overnight.
