  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/2 cup coconut milk

Instructions

  1. Peel and cube the butternut squash and sweet potatoes.
  2. In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until soft.
  3. Add the cubed squash and sweet potatoes to the pot.
  4. Pour in vegetable broth and bring to a boil.
