Brown Butter Sage Butternut Squash Pasta

  • 12 ounces pasta of choice
  • 1/2 cup unsalted butter
  • 1/4 cup fresh sage leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spread the diced butternut squash on a baking sheet and drizzle with olive oil. Roast for 25-30 minutes or until tender.
  3. Cook the pasta according to the package instructions; drain and set aside.
  4. In a skillet, melt the butter over medium heat. Add the sage leaves and cook until the butter turns golden brown and the sage is crispy.
