  • 2 cups acorn squash, cubed
  • 8 ounces pasta of choice
  • 4 tablespoons unsalted butter
  • 1/2 cup hazelnuts, toasted and chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss acorn squash cubes with olive oil, salt, and pepper. Roast in the oven for 25-30 minutes until tender.
  3. In a pot, boil water and cook pasta according to package instructions. Drain and set aside.
  4. In a skillet, melt butter over medium heat until it turns golden brown.
