- 2 cups homemade seitan
- 3 cups fresh spinach
- 1 pound lasagna noodles
- 4 cups marinara sauce
- 1 cup nutritional yeast
- 2 cloves garlic
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Preheat your oven to 375°F (190°C).
- In a skillet, sauté garlic in olive oil until fragrant.
- Add spinach, salt, and pepper, cooking until wilted. Set aside.
- Cook lasagna noodles according to package instructions, then drain.
- In a baking dish, spread a layer of marinara sauce on the bottom.
- Layer noodles, seitan, sautéed spinach, nutritional yeast, and more sauce. Repeat layers until ingredients are used up.
- Top with remaining sauce and sprinkle with basil and oregano.
- Cover with foil and bake for 30 minutes, then remove foil and bake for an additional 15 minutes.
- Let it cool for 10 minutes before serving.
Notes
- For a creamier texture, add a layer of vegan ricotta.
- Allow leftovers to cool completely before storing.
