Ingredients

  • 2 medium-sized beetroot
  • 200 grams mozzarella cheese
  • 1 cup breadcrumbs
  • 1 egg
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Peel and grate the beetroot.
  2. In a bowl, combine the grated beetroot, mozzarella, breadcrumbs, egg, olive oil, salt, pepper, and parsley.
  3. Mix well until combined.
  4. Form the mixture into small patties.
  5. Heat a pan over medium heat and add a little olive oil.
  6. Cook the patties for 4-5 minutes on each side or until golden brown.
  7. Serve hot.

  • For a vegan option, substitute the egg with a flaxseed mixture.
