Ingredients

  • 2 pounds beef chuck, cubed
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1 cup dried apricots, halved
  • 1/2 cup almonds, toasted
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions and garlic, sauté until softened.
  3. Add beef and brown on all sides.
  4. Stir in cumin, cinnamon, ginger, and cayenne.
  5. Add tomatoes, beef broth, and apricots.
  6. Bring to a boil, then reduce heat and simmer for about 2 hours.
  7. Season with salt and pepper, stir in almonds before serving.
