Beef Stew with Carrots & Potatoes

A comforting and hearty dish, perfect for family dinners.

  • 2 pounds beef chuck, cut into cubes
  • 4 cups beef broth
  • 4 large carrots, sliced
  • 4 medium potatoes, cubed
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add beef and brown on all sides.
  2. Add onions and garlic, cooking until onions are translucent.
  3. Stir in tomato paste, thyme, and rosemary.
  4. Pour in beef broth and bring to a boil.
  5. Add carrots and potatoes, reduce heat to a simmer, cover, and cook for 1.5 to 2 hours until beef is tender.
  6. Season with salt and pepper to taste before serving.

Notes

  • For a thicker stew, mix 2 tablespoons of flour with a little water and stir into the stew during the last few minutes of cooking.
