Beef Stew

A rich and hearty beef stew that’s perfect for chilly nights.

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 3 tablespoons olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, cubed
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons tomato paste
  • 1 bay leaf

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Add beef and brown on all sides.
  2. Remove beef and set aside. In the same pot, add onion and garlic and sauté until translucent.
  3. Add carrots, potatoes, and browned beef back to the pot. Stir in beef broth, Worcestershire sauce, tomato paste, thyme, salt, pepper, and bay leaf.
  4. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, until beef is tender.
  5. Remove bay leaf and serve.

Notes

  • For extra flavor, let the stew sit for a few hours or overnight before serving.
  • Feel free to add your favorite vegetables.
