- 2 pounds beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 3 tablespoons olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, cubed
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons Worcestershire sauce
- 2 tablespoons tomato paste
- 1 bay leaf
- In a large pot, heat olive oil over medium-high heat. Add beef and brown on all sides.
- Remove beef and set aside. In the same pot, add onion and garlic and sauté until translucent.
- Add carrots, potatoes, and browned beef back to the pot. Stir in beef broth, Worcestershire sauce, tomato paste, thyme, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, until beef is tender.
- Remove bay leaf and serve.

- For extra flavor, let the stew sit for a few hours or overnight before serving.
