Beef Enchilada Pasta One-Pan Meal

This Beef Enchilada Pasta is a quick and easy one-pan meal perfect for busy nights, combining the flavors of enchiladas with pasta.

Ingredients

  • 1 pound ground beef
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 2 cups pasta
  • 1 can enchilada sauce
  • 2 cups shredded cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the onions and garlic, cooking until the onions are translucent.
  3. Add the ground beef, breaking it up with a spatula, and cook until browned.
  4. Stir in the black beans, corn, enchilada sauce, chili powder, cumin, and salt.
  5. Add the pasta and enough water to cook the pasta. Bring to a boil.
  6. Reduce heat and simmer until the pasta is cooked and the sauce has thickened.
  7. Top with shredded cheese and cover until melted.
