Beef Enchilada Casserole

A delightful and cheesy beef enchilada casserole that will warm your heart and fill your stomach.

Ingredients

  • 1 pound ground beef
  • 1 can enchilada sauce
  • 2 cups shredded cheese
  • 1 can black beans, drained
  • 1 cup corn
  • 10 tortillas
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef until browned; drain excess fat.
  3. Add the enchilada sauce, black beans, corn, garlic powder, and onion powder to the beef and mix well.
  4. In a baking dish, layer 3 tortillas, then half of the beef mixture, followed by 1 cup of cheese.
  5. Repeat the layers, ending with tortillas and the remaining cheese on top.
  6. Bake in the preheated oven for about 30 minutes, or until the cheese is melted and bubbly.
  7. Let cool for 10 minutes before serving.

  • This dish can be made ahead of time and refrigerated before baking.
