  • 1 cup red wine
  • 1 cup beef broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 tablespoon olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 pound pasta of choice

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onions, garlic, carrots, and celery, sautéing until softened.
  3. Push the vegetables to the side and add the beef cheeks, browning them on all sides.
  4. Deglaze the pot with red wine, scraping up any browned bits.
  5. Add the beef broth, salt, pepper, thyme, and oregano.
  6. Bring to a boil, then reduce heat and simmer for 2-3 hours, until the beef is tender.
  7. Once cooked, shred the beef and mix it back into the sauce.
  8. Cook the pasta according to package instructions, then combine with the ragu.
  9. Serve hot, garnished with fresh herbs if desired.
