  • 2 cups orzo pasta
  • 4 strips turkey bacon
  • 1 cup shredded cheese
  • 2 cups spinach
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the orzo pasta according to package instructions.
  3. In a skillet, cook the turkey bacon until crispy, then remove and chop.
  4. In the same skillet, add olive oil, onion, and garlic, sautéing until translucent.
  5. Add spinach and cooked orzo, stirring to combine.
  6. Mix in chicken broth, bacon, salt, and pepper.
  7. Transfer to a baking dish, top with shredded cheese, and bake for 20 minutes.
  8. Let cool slightly before serving.
