  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/4 cup unsalted butter, softened

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine crushed graham crackers and melted butter; press into the bottom of a springform pan.
  3. In a skillet, cook the diced apples with brown sugar and cinnamon until soft.
  4. In a mixing bowl, beat cream cheese and granulated sugar until smooth. Add eggs, one at a time, then vanilla and sour cream; mix until combined.
  5. Pour the cream cheese mixture over the crust, then top with cooked apples.
  6. In another bowl, mix rolled oats, flour, sugar, cinnamon, and softened butter to form a crumble mixture.
  7. Sprinkle the crumble on top of the cheesecake mixture.
  8. Bake for 45-50 minutes or until the center is set. Let cool before serving.
