2 cups crushed graham crackers
1/2 cup unsalted butter, melted
4 large apples, peeled and diced
1/2 cup brown sugar
1 teaspoon cinnamon
16 ounces cream cheese, softened
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1 cup sour cream
1 cup rolled oats
1/2 cup all-purpose flour
1/4 cup granulated sugar
1 teaspoon cinnamon
1/4 cup unsalted butter, softened
Instructions
Preheat the oven to 350°F (175°C).
In a bowl, combine crushed graham crackers and melted butter; press into the bottom of a springform pan.
In a skillet, cook the diced apples with brown sugar and cinnamon until soft.
In a mixing bowl, beat cream cheese and granulated sugar until smooth. Add eggs, one at a time, then vanilla and sour cream; mix until combined.
Pour the cream cheese mixture over the crust, then top with cooked apples.
In another bowl, mix rolled oats, flour, sugar, cinnamon, and softened butter to form a crumble mixture.
Sprinkle the crumble on top of the cheesecake mixture.
Bake for 45-50 minutes or until the center is set. Let cool before serving.
Notes
For added flavor, consider adding nuts to the crumble.
