  • 1 cup apple cider
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, both sugars, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk the eggs, then add the apple cider, vegetable oil, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Fill the muffin cups about ¾ full with the batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack.

Notes

  • For added flavor, consider folding in chopped apples or walnuts into the batter.
  • These muffins are best served fresh, but can also be enjoyed the next day.
