  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a saucepan, boil the apple cider until it reduces to about 1/2 cup. Allow to cool.
  3. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In another bowl, combine eggs, vegetable oil, reduced cider, and vanilla. Mix well.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Fill the cupcake liners about 2/3 full with the batter.
  7. Bake for 15-18 minutes or until a toothpick inserted comes out clean.
  8. Let cool before serving.

  • For extra flavor, top with cream cheese frosting.
