Anti Inflammatory Turmeric Chicken Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon black pepper
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup kale, chopped
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and sauté until translucent.
  2. Add the carrots, garlic, ginger, turmeric, and black pepper; cook for another 2-3 minutes.
  3. Pour in the chicken broth and bring to a boil.
  4. Reduce the heat and simmer for 15 minutes.
  5. Add the shredded chicken and kale; cook until the kale is tender.
  6. Stir in the lemon juice before serving.

  • For added flavor, use homemade chicken broth.
