A quick and delicious recipe for vegan burrito wraps that are packed with flavor and perfect for any meal.

Ingredients

  • 4 large tortillas
  • 1 can black beans, drained and rinsed
  • 1 cup cooked rice
  • 1 avocado, sliced
  • 1 cup corn, fresh or frozen
  • 1 bell pepper, diced
  • 1 teaspoon cumin
  • salt to taste
  • 1/2 cup salsa
  • fresh cilantro for garnish

Instructions

  1. In a large bowl, combine black beans, cooked rice, corn, diced bell pepper, cumin, and salt.
  2. Lay out the tortillas and distribute the mixture evenly across them.
  3. Top each with sliced avocado and salsa.
  4. Fold in the sides and roll up the tortillas to enclose the filling.
  5. Slice in half and garnish with fresh cilantro before serving.

Notes
